Jean Anthelme Brillat-Savarin was a French jurist who played a prominent role in French politics after the Revolution. He was the author of what is considered the first treatise on gastronomy in history: “Physiology of Taste or Meditations on Transcendent Gastronomy”. Published in 1825, it contains a varied repertoire of topics related to gastronomy with the aim of providing this discipline with a scientific character; from history and science to poetry, as well as personal anecdotes, recipes, aphorisms or narratives featuring some of the most important foods.
